This was a pretty common practice in the town of Coober Pedy in South Australia, before air conditioners were a thing. With the intense heat during the summers, they just decided to carve into the sides of the hills where the temperatures were regulated by the rock.

You can either blast, chip, or saw it out. Any of those options are going to cost you a fortune unless you can work out a deal with a quarry. In Texas, a company named Ranger Excavating will come to your site and send out an APB that they either need or want dirt to bring a site to the proposed grade. I'm sure there is something similar in your area.

this was previously thought through on r/StructuralEngineering and r/buildingscience and there are a number of issues. \- Hydro/utilities/sewege, how do you get power, how do you carry away waste? \- how do you access or leave your place? stairs, ropes, elevator? \- building science, how do you keep try, how do you regulate %RH, insulation, air quality? Most of these answers could not be satisfactorily answered because any of those things would be a huge undertaking. For a couple of days, sure, it's called camping, for an extended period of time, you have to become a hermit.
